Also +1 to lemon ricotta pancakes - that is a way I like a pancake - and Dutch baby which for me is in a whole other category. Almost NOT a pancake.
I prefer savory breakfast too, but I’m feeling bad/sad for those of you who rarely have waffles or pancakes! Our family DOES breakfast - waffles or pancakes on the weekend are a treat!
If I am making pancakes I do prefer these days using Kodiak mix. With the milk/egg addition.
I have 2 sons - 1 is a pancake guy, especially if I put mini chocolate chips in the batter. The other is a Belgian waffle guy. Waffles or pancakes with shredded Granny Smith apples are pretty good.
My favorite is pancakes with raspberries and blueberries cooked in, with real butter and heated maple syrup. I don’t have them often, but man are they good.
Pancakes are so easy to make from scratch.
Pancakes are easier to make, but for me waffles are so much more delicious. In the Fang house, we make our waffles crisp by putting a lot of butter in the batter. Various pancake mixes claim that you can use the batter for waffles too, which is true if for some reason you want a soggy, doughy, flaccid, bad-tasting waffle. If on the other hand you want a delicious waffle use waffle batter and make it yourself.
@lje62 , my darling D2 developed a recipe for Swedish pancakes for one:
1 egg
About 0.4 c milk (just less than 1/2 cup)
1/3 c flour
1t sugar
Pinch of salt
Whisk together and cook 1/2 at a time in medium/small skillet. Flip when dry on top.
Roll up with whatever, like lingonberry jam, or smoked salmon and cream cheese, or applesauce…
DH’s waffle recipe has beaten egg whites, and makes a fine pancake.
Yuck on the fluffy beaten egg white ones. Best pancake recipe in my family is Uncle Doug’s sourdough pancakes. Starter from Alaska. Little pancakes, huge flavor.
Pancakes like from Denny’s IHOP, etc? I would rather skip breakfast.
Have you tasted the beaten egg ones? They are not so much fluffy as light and crisp. So good. I think I will make wafffles for breakfast tomorrow.
Yep, I just prefer eggier, Swedish or Alaska sourdough style. I don’t want a bunch of pores to soak up too much butter and syrup
Ironic that this thread keeps posting right under the “heart attacks are completely preventable” thread.
DH is a huge waffle fan and makes them at least once a week. We have a friend who supplies us with heavenly syrup from her farm in the Berkshires. I know what I’m having for breakfast tomorrow morning.
Have to go with pancakes, so you can make them into shapes or letters.
Why would waffles or pancakes contribute to heart attacks??? The waffle or pancake alone can be made relatively healthy - and fruit or nut toppings are not bad. Butter in moderation!!!

Pancakes! With fresh blueberries or with chocolate chips…my youngest is the best pancake maker in the family. We use the stoves griddle so no appliance needed!
I just use my Scanpan pan. So they really are PANcakes.
No butter on my pancakes or waffles. I make low-sugar fruit preserves with all the goodies we pick at the PYO (or throw in blueberries or raspberries in the batter). I use 2% milk (DH and S2 won’t go for skim). I use a scratch recipe so I don’t get lots of extra sodium. Will do sugar-free syrup if I am out and can’t get real maple.

Common sense and diet/nutrition sense would say for the general population (GENERAL) a waffle or pancake - not a stack - can be enjoyed on occasion without risk of falling over of heart attack.
