What are y'all Doing with your Turkey Leftovers??

<p>Looking for some fresh ideas…or even some good old easy ideas.</p>

<p>There were only four of us, so I cooked a turkey breast, which was big enough!
On the way back from the movie, we passed a man on a bench so D put together a huge grocery bag full of food for him. But when we went back he was gone, ( even though it was just a few minutes) so we left it with a note.
I am also planning on sending some back with her BF when he leaves today. Making sandwiches/ treating the dog, will take care of all of it.
I also like turkey burritos/tacos though.</p>

<p>We’ve been eating out for T-Giving for the past few years, which is great until the craving for cold stuffing hits…</p>

<p>Anyhow, my favorite leftover dish is to layer in a baking dish some turkey and stuffing, cover with gravy, and spread some leftover mashed potatos on the top…dot with butter and bake. Serve with leftover cranberry sauce…MMMMM. I wish I could have that tonight…</p>

<p>My favorite thing is to make turkey soup. </p>

<p>Sent my in laws home with lots of leftovers, but we had a 22 pound bird for only 5 people, so we’ll be eating turkey for a few days before I can get at the carcass and make my soup. I don’t really like to make any other dishes with the turkey. Just eating it plain w/gravy or in sandwiches.</p>

<p>I love turkey. So far we’ve had sandwiches, and my dog, who has terminal cancer and has to be cajoled into eating, is eagerly eating the dark meat. I often make a curried veloute sauce finished with a bit of cream and have sliced turkey on a bed of chopped spinach, covered with the sauce and sprinked with a bit of swiss or cheddar, then baked until bubbling and brown. Eventually, soup.</p>

<p>Two good ways to go are turkey hash and individual turkey pot pies. </p>

<p>The turkey probably doesnt require any more cooking so I make the bechamel, melt in gouda or gruyere, add peas and the turkey goes when it gets poured into ramekins because it just has to rethermalize. Left over puff pastry on the top.</p>

<p>Turkey salad sandwiches. Add diced celery, diced onions, and mayonnaise to some diced turkey, mix it up and that’s all there is to it.</p>

<p>It was just the 2 of us this year, so we ate out. Very glad we made that choice, but I am really missing the leftovers today!</p>

<p>Turkey tettrazini - cream sauce, mushrooms, shaved parmesan and garlic.</p>

<p>Here is another- Number One Son is in town so we are going to Indian tonight. Save left over curry or butter chicken sauce from the restaurant to make a super quick turkey curry the next day for children press ganged into raking your leaves.</p>

<p>I just put the carcass in the stockpot. <em>Mostly</em> in the stockpot–that creature is about a quarter inch too long! My favorite post-Thanksgiving turkey meal is turkey noodle soup and I think we will have a lot of it.</p>

<p>But I’ve got a couple of plastic containers of meat carved off that we’ll be needing to eat up–arbargy inspires me to pick up a jar of simmer sauce from TJ’s or something like that, that sounds delicious.</p>

<p>Turkey tetrazzini is my favorite childhood food. I add fresh chives. </p>

<p>Turkey and rice casserole. Combine cubed or shredded turkey, cooked brown or white rice, mushrooms, celery and 1 can cream of chicken and cream of celery or cream of mushroom. Bake 30 minutes at 350.</p>

<p>My mom used to make a Turkey Frame Soup…which of course, used the carcass. I don’t have her recipe though…don’t know what happened to it.</p>

<p>Do you serve the Turkey Tetrazzini over noodles?</p>

<p>Today took some leftover turkey and rewarmed some of the leftover Brie/cranberries/pistachios and spread on top - had mine open faced, D made a sandwich.</p>

<p>That brie does look yummy - I may have to try that. And that page has other cranberry recipes as well -I love cranberries so thanks for the link.</p>

<p>And the great thing is my husband can eat cranberries again. he was taking some meds where they were a no no buy was recently switched. Hmm, I need to dig out the great cranberry oatmeal bar recipe someone posted on CC a few years ago. it was yummy but it makes a LOT and I quit making when he couldn’t eat cranberries.</p>

<p>Bombay Turkey Salad</p>

<p>1/2 cup reduced-calorie mayonnaise
1/2 cup plain low-fat yogurt
1 tablespoon chutney or,peach chutney
2 -3 teaspoons curry powder
salt, to taste
pepper, to taste
1 1/2 lbs turkey breast, cooked, cubed
1 red apple, unpeeled, sliced
1 granny smith apple, unpeeled, sliced
3/4 cup grapes, your choice, seedless (halved)
2 tablespoons fresh chives, snipped
iceberg lettuce, for garnish</p>

<p>Directions:</p>

<ol>
<li>In a medium bowl, combine mayonnaise, yogurt, chutney, curry, salt and pepper.</li>
<li>Add the turkey, then add the apples, grapes and chives and toss gently to coat with the dressing.</li>
<li>Serve on a bed of lettuce.</li>
</ol>

<p>I add slivered almonds to mine too.</p>

<p>Turkey Devonshires…google it. OMG. Bacon, turkey, cheese sauce…regretting not doing my own bird the day after. But maybe we ill make a turkey for Christmas :)</p>

<p>We have no turkey leftovers. H smoked a turkey in his new smoker and his family typically prefers ham, and his sister made one and brought that. But everyone loved his turkey and chowed down. We’d gotten a small one since they never eat any…good thing I also have a turkey breast ready to cook tomorrow. We don’t do anything fancy-just eat it as we do on Tday-with stuffing, potatoes, green beans, whatever is leftover, until it’s gone.</p>
