What are y'all Doing with your Turkey Leftovers??

Very little in leftovers as the kids had friends over last night and they ate alot of the leftovers. Just enough for turkey sandwiches today. Next time I’ll make an extra turkey for some turkey dishes. I have made turkey stroganoff, turkey curry, turkey pot pie as well as just plain old left over turkey smothered with gravy with mashed potatoes, sandwiches, and in salad.

Turkey tettrazini, over fettuccine. Added Poetgirl’s suggestions for chives. Delish.

I saw a recipe where they added cream cheese. I have to say it was over the top. Very rich. Next year will just make basic cream sauce.

Lots of good ideas!!!

I googles Turkey Devonshire and the pics look very good.

I make a day after shepard’s pie with the leftover gravy, potatoes (mixing sweet and mashed) and leftover meats. Any leftover meet will go into enchiladas. I made far too much stuffing, so I may roll it into the middle of pork.

^^^
You can never make too much stuffing.

Mom2collegekids…no need for food coloring (eww!), chicken bullion or Parmesan. Just make a lovely roux, add cheddar cheese and add turkey. Pre-toast bread a bit (so it doesn’t get too soggy), top with cheesey, turkey goodness, and top with bacon. Put under broiler until bacon is crisp and sauce is bubbly :). Enjoy!!

You mean the extra Cornish game hen- not too much there. Was never fond of turkey and H prefers Indian dals. There were just the two of us for the first time in decades. Past several years we added stray families, relatives to son and us but no one this year. Had to scale down numbers of items- but still more than needed so it was a feast with annual his and hers favorites.

I (gasp) like Stove Top stuffing (lazy??) so I always buy some extra boxes this time of year to make when I feel like it.

I always made turkey soup until I decided I didn’t really like it that much. This year, I solved that problem by doing a prime rib roast instead of a turkey. I had a second meal of it tonight and am looking forward to a third (and final) night of prime rib tomorrow night!

Hot turkey sandwiches today, turkey soup tomorrow.

DW makes an awesome creamy turkey and wild rice soup. We’ll make a dinner of that one night, after that it’s great for lunches for a week.

For various reasons, we ate elsewhere yesterday, and I’m really going to miss my leftovers. Usually, though, it goes like this: For a couple of nights we simply do Thanksgiving dinner redux. I swear the stuffing gets better with each passing day.

Then for a couple of days we eat a turkey/rice/green bean casserole, the recipe for which D got in kindergarten (the memory makes it taste even better).

On the Sunday after Thanksgiving, I break down the turkey and make stock. What’s left of the meat gets cut into bite-size pieces, usually 2-3 cups’ worth. Stock and meat go into the freezer to await our traditional Christmas Eve dinner of turkey soup.

Just heard this last night. Put leftover stuffing in the waffle maker. Sounds awesome.

H is trying a recipe for turkey gumbo- he is in the kitchen right now. Hope it will be ready for dinner tonight, the smell is amazing!

Mds is coming over to make a turkey casserole for family dinner tomorrow night.

Too late for turkey day, but got a great recipe for mashed potatoes do ahead… Basically cook, whip in mixer, add butter, milk and a whole slab of cream cheese. The fat seems to keek the starch from getting grainy. I haven’t ever been happy with leftover potatoes. These are soooo good.

Dragon…if you want them to be REALLY good…add cream cheese with chives, and use half sour cream and half milk. Whip with the potatoes and place in a 2 qt casserole. When ready to eat…drizzle with paprika and butter and bake until warm.

Thy taste like twice baked potatoes…only better!

Argbargy, I do pot pies in ramekins, too. But a broth with some Greek yogurt, instead of B

Just used the last turkey in soup.

I tried a very effective short-cut item for the first time this year. My grocery store had pre-chopped onions and celery this year, also had parsley and a few seasonings in it…I was feeling a bit short on time and bought the pre-cut mixture. It worked beautifully! Had some left over after making the stuffing and so I put the leftover portion in a zip-lock bag and tossed it in the freezer. Used it just now for the Turkey Noodle Soup! There really isn’t much excuse for not cooking these days with so much of the prep work already done! I’m a fan! Short-cut items can make all the difference!

My 2 sons left today and left us with very little leftovers. DH made his turkey soup, but other than that we’ve only got a little dark meat left, if you don’t count the spoonfuls of stuffing and cranberry relish my kids left.

My kids just prefer eating turkey leftovers for sandwiches or just reheating it with the sides, so I decided to wait to see what was left before doing anything else with the leftovers. Big mistake.

I still have half of the turkey left and it’s not even been carved off yet! I’ve got plenty of carrots, celery and onions to make the soup with - just need to get some parsnips. Hopefully, I can get H to do some carving so I can make the soup tomorrow.

Turkey enchiladas! They can also be frozen for future meals.
