What's for dinner at your house tonight?

Heading into town and Trader Joes. Not sure what to make tonight.

Brussel sprouts if I am not too lazy to fry them. If I do not feel like making anything, then it will be hummus, salsa and avocado (have to peel it, darn. I do not like to scoop, you do not see what you are scooping, it might be a black spot). Well I will have very limited time between coming from the pool after 6pm and need to be at some meeting at 7pm, so I might just grab some fruit. that is how it is, dinner / food in general is never a priority but fridge is always full with fruits, sometime they fall out when I open it and some are sitting out of fridge, so plenty of fruits in a house and I love them all.

Those fajitas sound yum.

DD coming home tomorrow for intersession with a roommate. I’m going to do meatloaf, the killer sour cream/cream cheese mashed potatoes and Heinz beef gravy and frozen mixed vegetables. These skinny girls really put away the comfort food!

Brussel sprouts were great yesterday. I had them with feta cheese. Most veggies are great with feta in our house. I probably will have the same today or maybe soup from the can.

I get alot of inspiration from this thread, thanks to all who post. I am making poblanos stuffed with chicken and cheddar for tonight. I also have a pot of soup going. I always have homemade soup in the house, even in the summer. Right now it is Manhattan clam chowder, next week cream of mushroom.

I would have a revolt in my house if I served just fruit or brussel sprouts for dinner.
laketime- can you share the recipe for poblanos stuffed with chicken?

[Poblanos Stuffed with Cheddar and Chicken - Fine Cooking Recipes, Techniques and Tips](http://www.finecooking.com/recipes/poblanos-stuffed-cheddar-chicken.aspx)

I add 2 Chiles en adobo to the tomatoe mixture becuse my husband likes heat.

There is nobody to revolt here, empty nesters who are also extremely busy every eveining after work and over the weekends. Dinner is not what I want to spend my time on, I rather pursue my personal interests while I am physically able to do so. I personally would have a very hard time if my H. does not go to gym. What he has for dinner is not what I can control. I can only leave the things in a fridge, it is up to him to have it. I know for sure, that going out is NOT at the top of his list either. No, not only fruits, brussel sprouts. There are avocados, salsa, hummus, eggs, cheese, canned soups, pasta (uncooked, not a common meal in our house), tomatoes, bread, potatoes, beets, carrots, onions, garlic, ginger, breakfast (usually bread pudding), smoked salmon (most of the time), frosen peas, frosen fully cooked meat balls, frozen fully cooked sweat potatoes (from the store and our own), frozen left over chicken and many other things. Fridge is NOT locked, it could be easily open, but it is stuffed so much that something could fall out. So, openning fridge sometime require more time than you have at the moment.

Roasted Chicken Breast, bone in, Marinated with olive oil, fresh lemon oregano and thyme and mashed potatoes for hubby and for me, roasted zucchini, peppers, summer squash, tofu also marinated in same lemon marinade.
^^ I can actually have a meal of brussel sprouts alone with some toasted almonds and dried cranberries

^Thank you, I will try with cranberries and non-roasted almonds, both are staple food in my house, did not odccur to me to add them to my (and my H’s) favorite brussel sprouts. Looking forward, maybe even today!

Oh, it made me think about other combo. I love fried broccoli with peanut butter on a side. I know this one is definitely revolting to the most of others, my own discovery.

I got some leftover ham out of the freezer this morning. Thinking of putting it in a quiche for tonight. Suppose I can find a recipe, since I don’t have one!

Bone-in chicken breast roasted on top of root veg (parsnips, carrots), shallots, tiny red potatoes and maybe brussel sprouts done separately.
Leftover mac and cheese on the side for H.

Making a chicken in the crock-pot (very easy). Put a whole chicken in the crock, breast down and cover with wine (I usually use white), crushed garlic (2 or 3 cloves), a few tsps of dried thyme, salt, pepper, and cook for the day. Sometimes I throw a little quinoa or rice in for the last hour to soak up the juices. The chicken (skin is not crispy) comes out falling off the bone. Will make broccoli for a side, and sprinkle with feta (good idea Miami).

Last night I dined solo, and made a vegetable black bean soup–also very easy, nutritious, and delicious!

Stuffed Peppers. With a bottle of Franks Red Hot Sauce on the side (how I like to eat stuffed peppers!)

thank you laketime- I am going to try them soon.
Okay any easy ideas for chicken breast with bone?

^Sounds great, I would not mind if somebody would fix it for me!

DH will be out of town tonight so I plan on split pea soup (frozen leftovers) and a bagged salad. But I’m torn between that and a fried PBJ. Saw Paula Deen make it once and I’ve been curious to try it.

I’ve got a big pot of turkey soup simmering on the stove. Not sure if it’ll be ready for tonight’s dinner. If not, breakfast for dinner will be the menu.

I am also making stuffed peppers…only mine are Santa Fe Turkey Stuffed Peppers.

I use enchilada sauce as the liquid instead of water or chicken broth.
