Leftover chicken and quinoa from yesterday’s crock meal; roasted parsnips and carrots; steamed broccoli with a little olive oil and feta.

Agent99, I await your report on the Thai chicken–sounds very good!

Shrimp stir fried with every vegetable in the frig…broccoli, brussel sprouts, yellow squash, onions, asparagus, yellow, orange, red peppers, mushrooms. Served on top of quinoa.

Today I browned chicken thighs in an iron skillet then stuck them in the oven with chopped onions and vermouth - salt, pepper and rosemary. Pretty tasty. I put every vegetable in the fridge (butternut squash, red bell pepper, onion, green beans) on a cookie sheet with some olive oil and roasted them. Very easy. Then I had part two at a neighborhood association meeting. Great cheese, some raw vegetables, (fennel is great with dip!), and the world’s best miniature cupcakes - they were adorable and really really tiny.

spicy chicken caesar salad for me tonight. Change of pace for tomorrow night: italian sausages with tomatoes, peppers, and onions.

Meatballs and sweet potato french fries. Both fully cooked and frozen from Costco. Yummm!!! We eat all kind of meat / chicken / fish with wasabi, do not like anything else, no fancy cooking, we do not add anything. I add wasabi even to my salad (on rare occasions when I do not feel lazy to cut all the ingredients to fix my salad)

Today is DS’s 8th birthday so it is his choice. He chose steak, tater tots, carrots with ranch, and pumpkin pie for dessert (he will have a cake on Sunday with his friends).

^^^ Sounds like a yummy b-day dinner! (Tater tots can be SO good if you haven’t had them in awhile - ketchup and a little salt - yum)

I cooked nice dinners all week, would really love to NOT have to cook tonight - even if it’s just bringing home a really good pizza. :)

I’m making crock pot lasagne today and broccoli. Very low brow but i use fresh mozzarella and whole fat ricotta. Have found an easy no-brainer broccoli recipe:

Put a little vegetable oil - NOT olive - in small nonstick pan and get it hot. Throw in frozen broccoli florets. Stir it around awhile. Put a fair amount (2 or 3 shakes) S&P in half a cup water, stir well, add to pan of broccoli and cover. Steam about 3 mins.

Hard to describe. Just tastes great.

Shrimp Scampi cooked with garlic, tomatoes, spinach, lemon juice, white wine…linguini, sauteed carrots, sugar snap & snow peas and garlic bread, it was yum.

Found this excellent recipe for a Mango glaze (mango, honey, spices) and used it on fresh mahi mahi filets. I paired it with an edamame salad and steamed wild rice, superb!

^^^^^Don’t tease us, give it up!

Hamburger soup- so easy and good on a cold night. Brown ground beef and chopped onion. Add quart of beef broth, can of condensed tomato soup with can of water. Bring to low boil and add frozen mixed veggies, a couple of diced potatoes and a handful of barley or orzo. Season to taste, chop some parsley, bay leaf. Simmer for at least half hour. Done!

Italian sausage and thinly sliced pork loin simmered in tomato sauce with sliced red peppers and onions. Best with polenta, but since I am the only one that likes polenta, I will serve French bread on the side. I deglazed the pan with Cocobon, a California red from TJs.

I just finished making a bunch of stuffed peppers for tonight’s dinner. I have leftover hamburger meat so maybe I’ll try minnymom’s hamburger soup, and some chili for game day.

I bought rare roast beef at the deli yesterday so I’m thinking sandwiches, kosher pickles, chips and cantaloupe for dessert.

Spaghetti squash with ground turkey and mushroom tomato sauce and a tossed salad.

Chocchip - your post reminded me of something I saw on Food TV, they stuffed a pepper with leftover chili and baked for 1/2 hr or so. Simple, but looked so good–wondered why I never thought to do that.

Going out tonight! H leaving tomorrow for business/golf trip to FL & as I’m being left behind in the cold, I’m cashing in my guilt coupon.

Lemon pepper chicken breast and spaghetti squash with sauteed onions, green, red, yellow peppersand broccoli topped w/ a can of italian tomatoes and parm. cheese.

Went to our local watering hole for pub food and friends for a lively religious discussion!

Having leftovers tonight but tomorrow, my friend will be teaching me how to make her spaghetti sauce. It’s so good. I think I’ll make chicken parm for dinner.
